I just went through a similar issue with my race car.
You need to put it in gear with the rear wheel of the ground, start in gear and apply the brake and clutch together, if the clutch releases but drags the engine down the clutch is not releasing completely.
If it stalls it is not releasing at all.
Does the peddle feel correct?
Finally did you replace the pilot bearing?
If the hydraulics are suspect start there, I can't rember if the clutch slave is external or not. On an external you can watch it work and use a pry bar to move the fork to try the clutch operation from underneath. Internal is more dificult.
Finally as with the race car we had a warped disk new out of the box. The trans had to come back out and replaced the clutch again. The same symptoms can come from bad or damaged pressure plate, damaged or badly worn flywheel. and so on.
Good Luck
