Has it got the correct length dipstick in it? Seriously there is something happening that makes me think overheat. The only reason that it would overheat that you haven't addressed is the oil level being to high causing extra drag and foaming of oil. the oil foaming will cause overheat and fires. Other things that should have been addressed previous: the OD/lockup solinoid control valve may be bad. The engine is working so hard the pressure rise is shutting the cooler off, this happens as part of the normal pressure rise as the load goes up. It is normally addressed at overhaul by improving or reducing the internal leakage and drilling a cross feed hole to prevent the cooler circuit getting shut off completly. And finally a dually is going to be running at a whole bunch of RPM at 75 mph, that and a load will work the poor thing almost to death. Maybe a slower speed would just save you a bunch of money. Good Luck
