I'd say if your bus is 1988 or newer, then you won't need to add any insulation; if it's an older buss, you'll probably need to inspect what's there and make a decision.

I've seen a lot of things done with expanding poly foam insulation, and that's what I'd recommend. As for condensation, more air flow = less moisture to condense. Keep the interior well ventilated or well air conditioned and you shouldn't have any problems.
